Sweet and very pretty energizing plant powered smoothie. Satisfies sugar cravings with hunger quashing fiber and powerful immune boosting antioxidants without relying on refined or artificial sweeteners.
WHY I LOVE IT
For me it’s all about letting my sweet tooth have its way in the most nourishing and healing way imaginable. Just to be clear, craving something sweet doesn’t bother me in the least. In fact, I lean into my sweet cravings when they happen. That’s because some of the sweetest whole plant foods are also high in essential nutrients. Intensely sweet raw beets are a perfect example of how the sweetest plant foods are some of the most beneficial. Beets have antioxidant and anti-inflammatory properties. They’re also high in fiber and have a way of making things look like they belong in the Barbie townhouse. Cantaloupe and strawberries, always a refreshingly hydrating combo, add to the array of health promoting antioxidants in this smoothie. Ginger boosts the anti-inflammatory impact while balancing the mellow flavors with an edgy dash of spice.

A HIGH SPEED BLENDER IS BEST
You don’t absolutely need a high speed blender to make this smoothie. But a high speed blender really helps if you want the benefits of a high fiber whole plant food smoothie without the grittiness. The good news is that not all high speed blenders are super expensive. Mine is not. You just need a motor that’s at least 1000 watts and some good blades. I’m not saying that having a Vitamix isn’t a wonderful thing, just that if that’s not what you have, you can still make some great smoothies!



FROZEN INGREDIENTS
Using frozen ingredients in this smoothie will make it more refreshing in warm weather. But I’m also a year round fan of frozen fruit. Commercially frozen fruit is often less expensive than fresh fruit, and freezing the fresh fruit you have can also be a great idea. You can even chop your beets and store them in the freezer just for smoothie making purposes. If you’re using all frozen ingredients, however, you may need to let them thaw a little before processing.
VARIATIONS
- Fresh Ginger: Use 1 tsp of minced fresh ginger instead of ground
- Turmeric: Fresh or ground turmeric would be fabulous in this smoothie
- Mango: Try using mango in place of cantaloupe or strawberries
- Coconut Extract: 1/4 tsp of coconut extract is delicious with the other flavors
- Ground Cardamom: Always a lovely delicate touch, try adding 1/4 to 1/2 teaspoon

Magenta Magic Cantaloupe Strawberry Beet Smoothie
Equipment
- blender (a high speed blender works best)
Ingredients
- ½ cup chopped raw beets
- 1 cup chopped cantaloupe
- 1 cup strawberries
- 1 cup unsweetened plant milk
- ½ tsp ground ginger (or 1 tsp fresh ginger)
Instructions
- Place all ingredients in the bowl of a blender and process until smooth.
- Makes one huge smoothie (about 21 oz) or two medium (about 10 oz each).
