Semi-Dried Cherry or Grape Tomatoes Using Conventional Oven

An easy and delicious way to preserve ripe cherry or grape tomatoes. Wonderful as a standalone snack, partly dried tomatoes can also be used as a garnish or as an ingredient in other dishes. Juicy yet slightly caramelized, these tomatoes are a perfect add-on to sandwiches, pizzas, pasta, frittatas and so much more.

  • Parchment Paper

Ingredients
  

  • grape or cherry tomatoes (any amount so long as they can fit on a sheet in a single layer after being sliced in half lengthwise)

Instructions
 

  • Preheat oven to 250℉
  • Line the baking sheet with parchment paper.
  • Wash tomatoes and remove any stems.
  • Slice each tomato in half lengthwise and arrange over parchment paper on the baking sheet seed side up in a single layer. Tomatoes can be close together and touching but they should not overlap.
  • Place baking sheet in preheated 250 ℉ oven and bake for two hours.
  • Partly-dried tomatoes can be enjoyed immediately or stored in the fridge in an air tight container for up to a week. They can also be stored in the freezer in a sealed container such as a ziplock bag for up to a year.
