An easy and delicious way to preserve ripe cherry or grape tomatoes. Wonderful as a standalone snack, partly dried tomatoes can also be used as a garnish or as an ingredient in other dishes. Juicy yet slightly caramelized, these tomatoes are a perfect add-on to sandwiches, pizzas, pasta, frittatas and so much more.
WHY I LOVE THEM
Semi-drying is my favorite method for preserving small tomatoes. Making homemade semi-dried tomatoes is also an easy way to create a versatile garnish that can be used in multiple ways. When my summer vegetable garden is at its peak and I have more cherry and grape tomatoes than I can handle, semi-drying is an easy way to shrink my bounty making it more manageable. I can keep semi-dried tomatoes in the fridge for up to a week, adding them to my avocado toast or hummus wraps whenever I’m in the mood. They also freeze well, which means I can enjoy them for even longer. But these crimson beauties are so tasty that I like to make them all year round. Semi-dried tomatoes are great for entertaining, elevating simple salads or adding a bright red festive focal point to holiday party platters.

EASY PREP
No measuring, oil or seasoning required. A reasonably good knife, a cutting surface and a baking sheet covered in parchment paper’s all you need. Make as many as you can fit on a single layer.
First wash tomatoes and take off any stems. Then slice them lengthwise and place them face up on the parchment paper lined baking sheet. It’s ok if the halved tomatoes are close together, but they shouldn’t overlap.


GO SLOW
Easy and fast don’t always go hand in hand. Making semi-dried tomatoes does take a sizable chunk of oven time, but you can go about your business and enjoy your life while they’re cooking because they don’t even need to be turned. Place your sheet full of halved tomatoes in a 250 °F oven and bake for two hours. You don’t even have to peek at them if you don’t feel like it.

Semi-Dried Cherry or Grape Tomatoes Using Conventional Oven
Equipment
- Baking Sheet
- Parchment Paper
Ingredients
- grape or cherry tomatoes (any amount so long as they can fit on a sheet in a single layer after being sliced in half lengthwise)
Instructions
- Preheat oven to 250℉
- Line the baking sheet with parchment paper.
- Wash tomatoes and remove any stems.
- Slice each tomato in half lengthwise and arrange over parchment paper on the baking sheet seed side up in a single layer. Tomatoes can be close together and touching but they should not overlap.
- Place baking sheet in preheated 250 ℉ oven and bake for two hours.
- Partly-dried tomatoes can be enjoyed immediately or stored in the fridge in an air tight container for up to a week. They can also be stored in the freezer in a sealed container such as a ziplock bag for up to a year.
